Cake with candied fruits
A source of healthy fats and fiber, this candied fruit cake is rich in vitamins and antioxidants thanks to the citrus and spices. Its sweet taste is balanced by a light spiciness, making it an excellent dessert for a keto diet.

Combine:
- cashew or peanut butter (50 g);
- butter (20 g);
- hot milk (60 g);
- erythritol (60 g);
- salt (1 g).
Then add an egg (50 g) to the mixture and mix well.
Next, add lemon or orange juice (20 g), lemon zest (4 g), and fresh ginger (10 g), then mix again until smooth.
In a separate bowl, mix all the remaining dry ingredients:
- almond flour (100 g);
- coconut flour (20 g);
- baking powder (4 g);
- cinnamon (3 g);
- xanthan gum (1 g).
After that, add the dry ingredients to the wet mixture and gently mix.
Finally, add berries (in any quantity) and candied fruits in any quantity. Mix again.

Transfer the resulting dough to a baking pan and place it in a preheated oven at 180°C.
Bake the cake for 35-45 minutes, then cool it on a rack.
Wrap it in plastic wrap and place the cake in the refrigerator for at least 8 hours for better soaking.
