Mix psyllium (12 g) with 20% cream (300 g) and sweetener (10 g or to taste).
Let the mixture sit for 10-15 minutes for the psyllium to swell well. After that, add eggs (6 pcs.) and beat all the ingredients with a mixer until smooth.
Add the dry ingredients:
- salt (1/2 tsp);
- baking powder (1 tsp);
- soda (1 tsp);
- coconut flour (15 g).
Beat the batter again thoroughly until it resembles pancake batter.
Finally, add vegetable oil (15 ml) and mix until smooth.
Heat the frying pan well for pancakes and cook the pancakes as usual.
