Blend the chopped avocado (1 piece) with vanilla extract (1/2 tsp) using a blender. It’s important to use a ripe avocado for the mixture to be completely smooth. Then add the zest of half a lemon and a pinch of salt (to taste).
Melt dark chocolate (minimum 85%, 150 g) and coconut oil (1 tbsp) in a water bath or microwave. After that, mix the melted chocolate with the avocado and stir well.
Leave the mixture in the refrigerator for 30 minutes or until the dough becomes firm, but not completely.
Form small truffle balls by hand. Alternatively, use a small scoop or two teaspoons.
Roll in cocoa powder (1 tbsp).
