În blender, amestecați 100 ml de smântână cu un conținut de grăsime de 33–35 % și 100 g de spanac până obțineți un amestec omogen.
Transferați amestecul obținut într-o cratiță mică, adăugați extract de vanilie (1 linguriță) și puneți la foc mic pentru a încălzi.
Turnați încet gălbenușurile (3 buc.) în amestecul de smântână, amestecând constant pentru a evita coagularea. Încălziți la foc mic timp de 5–7 minute, până când amestecul începe să se îngroașe, fără a ajunge la fierbere. În acest timp, amestecați constant.
Așteptați să se răcească amestecul.
Dacă folosiți gumă xantan (1/8 linguriță, opțional), amestecați-o cu îndulcitorul (2 lingurițe).
Apoi, bateți smântâna rece cu un conținut de grăsime de 33–35 % (400 ml) până obțineți o consistență pufoasă, adăugând îndulcitorul în fir subțire.
Incorporați cu grijă amestecul rece de lapte și gălbenușuri în smântâna bătută. Dacă doriți, adăugați MCT sau unt (2 linguri). Bateți înghețata timp de 1–2 minute.
Apoi, distribuiți amestecul în forme.
Puneți înghețata în congelator timp de 4–5 ore.
Pentru a obține o textură mai omogenă, puteți amesteca înghețata de 2–3 ori în prima oră.
