Zdrobiți ciocolata (30 g) și topiți-o până devine lichidă.
Amestecați ciocolata topită și oul (100 g) până obțineți o compoziție omogenă.
Adăugați făina de migdale (15 g), gumă xantan (1 g), vanilină (0,5 g), sare (0,5 g) și îndulcitor după gust.
Frământați bine aluatul până devine dens și omogen.
Făina de migdale face aluatul mai friabil. Dacă compoziția se sfărâmă, adăugați 1-2 g de ciocolată sau puțin ou. Dacă aluatul este prea moale, adăugați încă 1-2 g de făină de migdale.
Formați turtele pe o tavă tapetată cu hârtie de copt sau cu un covoraș din silicon.
Coaceți la 170-180°C timp de 25-30 de minute.
Transferați turtele coapte pe un grătar și lăsați-le să se răcească complet.
