Stingeți spanacul (100 g) în tigaie cu unt topit (1 lingură) la foc mediu timp de 3–4 minute până devine moale, apoi lăsați-l să se răcească complet.
Bateți ouăle (3 buc), adăugați făina de migdale (5 linguri), sărați și piperați. Amestecați până devine omogen.
Formați 8 bile din aluat. În centrul fiecărei bile puneți bacon (după gust). Aplatizați bilele, dându-le forma de clătite.
Prăjiți clătitele timp de 2–3 minute pe fiecare parte la foc mediu.
Transferați pe o tavă și coaceți la 180 °C timp de 10 minute.
